Beef pilau

Hey everyone! long time no blog huh? Sorry about that. I am back with a bang and my mum's pilau recipe. Back in high school this was my favourite food. Don't get me wrong it still has a special place in my heart. My mum would come visit me in school with this pilau and when I tell you my classmates went crazy over it🙆‍♀️🙆‍♀️ Can't blame them though it's life changing and I'm now here to share it with all of you. It's super simple to make and doesn't have a tonne of ingredients. To get started you will need;


Ingredients:

  1. 300 gms cubed boneless beef

  2. 2 tbs pilau masala (Get good masala I recommend Tropical Heat)

  3. 6 cloves crushed garlic

  4. 1 tsp cruched ginger

  5. 2 tbs tomato paste

  6. 1 tsp cumin

  7. salt to taste

  8. 1 large onion

  9. 2 cups rice

  10. 5 cups water

I emphasised that you should get good quality pilau masala because if you get poor quality pilau masala it will change the taste of your pilau or rather the flavours just won't shine and it will be blant and you will end up with pilau njeri and we don't do that here😄


Method:

Start by adding 1 cup of water and boil your meat until it's fully cooked. Boiling will also tenderize tough meat.

Next fry your finely chopped onion until it turns golden brown then add your garlic and ginger and cook them until fragrant.

Then add your boiled meat and the spices which are cumin and pilau masala. Stir it up and add your tomato paste and thoroughly stir it in order for the flavours to get to know each other better😉 Add a bit of water so that it can form a bit of a sauce then add in your salt.

That's done? Great! now add in the rest of the water and bring it to a boil. Your sauce should have a rich red colour from the tomato paste. If not, add some more or if you have some soy sauce add a little bit in there.

Once the water has boiled, add the rice, give it a good mix then cover it and let it cook on low heat and your pilau is ready.


Easy peasy right? i know!





Serve it with some kachumbari and enjoy!
