Creamy butternut soup


Hey everyone and thanks again for all the love and support you have shown me on my last two posts. Today i'll show you how to make butternut soup. This is my mother's recipe and we love it so much. Trust me I never once thought I would be the one to vouch for butternut soup but here I am. It's oh so good😍


For this recipe you will need:

  • Butternut

  • 3 garlic cloves

  • 1/2 teaspoon ginger

  • 3 tbs cream/milk

  • 2 carrots

  • 1 chicken cube

  • 2 cups of water/ vegetable stock (use according to how much butternut you want to make)

  • Salt and black pepper to taste

  • 1 tbs butter/margarine


Put your chopped butternut, garlic, ginger, carrots and water in a sufuria and bring to a boil. Once they're cooked (you know it has cooked when you pierce your butternut with a knife and your knife cuts through it easily) let them cool for a few minutes. Transfer your boiled ingredients plus the water in a blender and blend it until it becomes smooth.

Transfer the soup into a sufuria on low heat and add the chicken stock, salt, black pepper and butter and let it simmer for a few minutes then add your cream/milk and cook for about two more minutes and your soup is ready.
